Kesar Pista Bicuits / Saffron Pistachio Cookies (eggless)

Kesar Pista Cookies are sweet,rich ,bright hued cookies that makes it a perfect addition for every special celebrations at home.The blend of saffron and pista makes it more flavorful with crunchy toppings.You can also add assorted nuts but i like the combo of yellow cookies with crushed green pistachios.
I love all sorts of cookies particularly the soft,powdery and cookies that just melts in my mouth.Bake the cookies for 15 min or until lightly colored at the edges.It might still seem soft when out of the oven but turns crunchy on cooling.
You can make these a day prior for they stay fresh and delicious even the next few days when stored in an airtight container at room temperature.
These crunchy treats make an excellent evening snack for kids,they are still light despite their richness.Serve these cookies with a hot glass of milk.

BAKING TIME : 15 MINS*(180 DEGREE C)

INGREDIENTS

1/2 cup maida (heaped)

1/3 cup sugar (heaped)(measure and then powder)

1/4 cup cornflour

1/4 cup butter

1/4 tsp saffron (soak in 1 tbsp warm milk)

1 -2 tbsp milk*(if required )

1/4 tsp baking powder

8 pistachios (crushed)(for garnish)

Milk if required to make dough

METHOD

Preheat oven to 180 degree C.Powder the sugar and soak saffron in 1 tbsp warm milk for 10 mins.

In a large mixing bowl sieve maida,cornflour and baking powder.

Cream butter and sugar until light and fluffy.Add saffron milk an mix well.

Gradually add dry ingredients to the butter mixture, beating just until incorporated.Add 1 -2 tbsp milk if required to make soft dough.

Grease the baking tray with ghee and dust some flour.Make small gooseberry sized balls and press to flatten them gently.Arrange these cookies on the baking tray leaving an inch gap in between them and bake for 15 mins at 150 degree C.

I made some heart shaped Kesar Pista cookies for Valentines day but couldn’t post them yesterday.Roll out the dough onto a floured surface and cut using cookie cutters.

Store cookies in tightly covered containers.
