Fruit kesari is usually served in weddings with apples,pineapple and some grapes.But today i tried it with just apples and it was super delicious.Some puree the apple that makes the kesari go like porridge.But i prefer to use chopped apples which tastes good and stays crunchy on cooking.Very simple sweet recipe that is so rich with the addition of apples ,ghee roasted nuts and raisins.Do try this yummy kesari at home and share it with your loved ones ♥

SERVES : 6
INGREDIENTS
1 cup rava
1 cup apple chopped
1 1/2 cups sugar + 2 tbsp sugar
3 cups water
3 tbsp GHEE
10 cashews (broken)
3 cardamoms
5 raisins
Yellow food colour as per your need
METHOD
Chop the apples,mix them with 2 tbsp of sugar and let it rest for 20 mins.
In a large bowl add 3 cups water,food colour,cardamoms,1 1/2 cups sugar and bring it to boil.
Then add the chopped apples and reduce to low flame.Add the rava little by little on low flame.Stir continuously so that no lumps are formed.Switch off the flame when the kesari is still watery with dosa batter consistency because the kesari would turn hard later.
Roast the nuts and raisns in the remaining 2 tbsp of ghee.Add it to the cooked rava along with the ghee and mix well.
Apple kesari ready to serve now.
TAKE CARE TIPS:
Stir continuously while adding the rava else you could end up with rava lumps.
You can roast the rava for 3 mins on low flame with a tsp of ghee and then use it for making kesari.
