Sesame Burfi is a crunchy,nutty traditional sweet of India.These burfis are so nutritious with just two healthy ingredients sesame seeds and jaggery, also a zero oil and zero sugar sweet recipe.Lot of variations are followed in different regions of India in preparing this sweet.
Sesame Burfis are made for Makar Sankranti in Maharastra(India),an auspicious festival of India that shows the onset of spring season.People make them at home with all rich ingredients like cashews,khoya,condensed milk and share it with their friends and relatives.
In Gujarat Sesame Burfis are specially made for Uttarayan ( Kite festival ).They use either jaggery or sugar for making this nutty sweet also know as Til Chikki.
But in Tamilnadu (India ) we just use jaggery and it is mostly made for Krishna Jayanthi as a Nivedhyam for Lord Krishna.It is an easy and quite simple recipe that could be made in huge batches for a group of people.You can also store them in airtight containers for a month.
You can use either black or white sesame seeds.Make sure you roast the sesame seeds in a pan for 3-5 mins in low flame to make them more cruchy in the burfi.Only thing to concentrate is the jaggery consisteny but once you learn the trick it is very easy to make a home and you won’t buy them from the stores.Do make this healthy burfi at home and when you crave for some sugary stuffs,you can happily indulge in this sweet without any guilt.

INGREDIENTS :
1 cup sesame seeds
3/4 cup jaggery
1/2 tsp cardamom powder (optional)
1/4 cup water
METHOD
Measure the sesame seeds and jaggery.Heat a pan,dry roast the sesame seeds alone in medium flame until they begin to crackle (3-5 mins).Do not let them to smoke or burn.keep it aside and let it cool.
Crush the jaggery and keep it aside.Add the jaggery ,cardamom powder and water in a pan .
Let them boil in medium flame until the desired consistency of jaggery is obtained.To check the consisitency ,just drop some molten jaggery in a bowl of water ,once you gather them it should be able to form a soft ball.
Now add the roasted sesame seeds and mix them with the jaggery evenly.
Grease a plate with ghee and transfer the mixture.Spread them gently with a greased spatula and cut the burfis to desired shapes.
Store the Ellu Mittai / Sesame Burfi in an air tight container at room temperature.
TAKE CARE TIPS
Use good quality jaggery ,do not use paggu vellam.
You can use a pinch of sukku powder for the flavour.
Do not cook the sesame for a long time after adding it to the jaggery else they will become chewy and lose their crunchiness.
